i started with an e-smith as a file server/gateway my the local school
this was replaced after two years when the head office eventually got
around to supporting us
the modifications i wrote to support the staff i now sell around the
world

the rpm to manage the web filter dansguardian is the most popular
esp. in US schools because their funding requires a web filtering
solution 
i think generally the schools i deal with just put e-smith in as a web
proxy

i hear a lot of references to ltsp being used by schools
i wrote a howto on getting thin clients to work in '99, which is in a lot
of distros
it was made spectacularly irrelevant when ltsp.org was released at the
same time ;-)
