Another option is Puppy Linux - http://puppylinux.org - it's designed to run 
completely from the CD and has a separate install process.  It's also designed 
to run in very small environments and on older systems, so it's good for 
demonstrating that a Windows 95 machine can be upgraded to something with a 
lot of the modern tools.
