Hi Holger,
Leaving Sydney on the 23rd (after SLUG) and being in Melbourne to fly
out on the 27th is four days. So fitting in a crossing to Tasmania
and back or a trip to Adelaide is possible but will mean more driving
than sighseeing.
YHA's are fantastic. A YHA based itinerary that takes in some nice
places could be:
Sydney - Canberra - Thredbo - Albury/Wodonga - Melbourne
(~3 hours driving each day, or skip Albury/Wodonga to be in Melbourne
on the 25th)
I once drove some backpacking friends from Canberra to Albury/Wodonga,
stopping in Thredbo (including the walk to Mt Kosciuszko) and the
showstopper spot for them was around Lake Hume - such different
geography to anything they have "back home".
Another possibility is to travel around the coast to Melbourne. Again via YHAs:
Sydney - Batemans Bay - Merimbula - Lakes Entrance - Melbourne

Mikal's suggested car rental companies are all good because you can
drop off at Melbourne Airport. http://www.europcar.com.au is another
possibility.
