I assume you have seen this: http://www.spamassassin.org/doc.html ?... 
Not being sarcastic... its just there is a link in the bottom group that 
talks about using procmail to sort the spam into a separate folder - not 
sure if this is applicable to your setup... and the spamassassin site 
appears to be in flux at the moment
